Ingredients

For the Tart Dough

Instructions

Preparation

  • In a food processor, combine the flour, powdered sugar, and salt. Pulse until blended.
  • Add the cold, cubed butter to the mix and pulse until crumbly.
  • Add the egg yolk and ice water, pulsing until the dough binds together. Shape into a disk, wrap in plastic, and chill for 30 minutes.

Baking the Tart Shells

  • Preheat oven to 350°F (175°C). Roll out chilled dough and press into tart molds or mini muffin tins.
  • Poke holes in the dough to prevent bubbling. Bake for 12-15 minutes until lightly golden.
  • Allow the tart shells to cool completely.

Making the Goat Cheese Filling

  • In a mixing bowl, beat together goat cheese, cream cheese, honey or maple syrup, vanilla extract, and lemon zest until smooth.
  • Spoon or pipe the mixture into the cooled tart shells.

Preparing the Raspberry Topping

  • In a saucepan over medium heat, combine raspberries, sugar, and lemon juice. Cook for about 5 minutes until the raspberries soften and release juices.
  • If desired, add cornstarch for thickness and remove from heat to cool.

Assembling & Serving

  • Spoon the raspberry mixture over the goat cheese filling.
  • Garnish with fresh mint leaves and drizzle with honey. Dust with powdered sugar if desired.
