Ingredients

Main Ingredients

  • 1 15-ounce can chickpeas Drained and rinsed
  • 1/2 cup crumbled feta cheese Creamy and tangy
  • 1/3 cup dried cranberries Natural sweetness
  • 1/4 cup finely chopped red onion Adds a sharp, crisp bite
  • 1/4 cup freshly chopped parsley Lends freshness
  • 2 tablespoons toasted almonds or walnuts Optional for added crunch

Vinaigrette

  • 3 tablespoons extra virgin olive oil Healthy fat
  • 2 tablespoons freshly squeezed lemon juice Brightens the dish
  • 1 teaspoon honey or maple syrup Balances sweetness
  • 1 teaspoon Dijon mustard Adds depth
  • 1/2 teaspoon garlic powder Enhances flavor
  • 1/2 teaspoon salt To taste
  • 1/4 teaspoon freshly ground black pepper Adds complexity

Instructions

Preparation

  • In a large bowl, combine the drained and rinsed chickpeas, crumbled feta, sweet cranberries, finely chopped red onion, chopped parsley, and toasted nuts (if using). Toss gently until well mixed.
  • In a separate bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, honey (or maple syrup), Dijon mustard, garlic powder, salt, and black pepper until smooth and combined.
  • Drizzle the vinaigrette over the salad and toss again to ensure everything is evenly coated. Let it sit for about 10 minutes before serving, allowing the flavors to meld beautifully.
  • Serve the salad chilled or at room temperature. It can be enjoyed on its own or wrapped in a tortilla, or alongside greens such as spinach or mixed salad leaves for an even heartier option.

Notes

For an added layer of flavor, consider marinating the chickpeas in lemon juice for 30 minutes before assembling the salad. Feel free to experiment with different nuts or seeds, such as sunflower seeds, for varied texture. If you’re short on time, canned chickpeas are a convenient option, but homemade chickpeas offer a rewarding alternative.
