Instructions

Preparation

  • Slice the mini pineapples in half lengthwise and scoop out enough flesh to form a shallow 'boat', leaving some fruit intact.
  • Brush the insides with coconut oil and drizzle with maple syrup.

Grilling

  • Preheat a grill or grill pan to medium-high heat.
  • Place the pineapple halves cut-side down on the grill and cook for 5–7 minutes to achieve grill marks and caramelization.

Making the Yogurt Filling

  • Chill in the refrigerator while grilling the pineapples.
