Instructions

Preparation

  • Preheat your oven to 150°C (300°F).
  • Whisk the egg whites with a pinch of salt until soft peaks form, then gradually add the granulated sugar and whisk until glossy, stiff peaks form.
  • In another bowl, combine the finely ground pistachios, powdered sugar, and all-purpose flour.
  • Fold the dry mixture gently into the meringue with a spatula.

Baking

  • Transfer the mixture to a piping bag and pipe small rounds onto parchment paper. Bake for 25-30 minutes until dry and light golden.
  • Allow the meringues to cool completely.

Whipping the Cream

  • Beat the heavy cream with powdered sugar until soft peaks form, then add rosewater and optional gel coloring.
  • Chill the whipped cream until ready for assembly.

Assembly

  • Pipe or spoon whipped rose cream on the flat side of one meringue, then sandwich with another meringue.
  • Dust with powdered sugar and sprinkle with crushed pistachios or dried rose petals for garnish.
