Ingredients

For the Garlic Butter

  • 2 tablespoons melted butter (or ghee for Whole30) Adds flavor and helps achieve a golden crust.
  • 3 cloves garlic, finely chopped Provides aromatic essence that complements the lamb.
  • 1 teaspoon chopped fresh thyme Brings a fresh herbal note.

For the Lamb Chops

  • 5 pieces lamb loin chops The star of the dish, providing meaty bites.
  • Kosher salt, to taste Enhances all the delightful flavors.
  • Freshly ground black pepper, to taste Adds a hint of spice.

Instructions

Preparation

  • Allow the lamb chops to sit out for 20–30 minutes to reach room temperature. Pat them dry with paper towels.
  • Generously season both sides of the chops with kosher salt and freshly ground black pepper.

Cooking

  • Heat a cast-iron skillet over medium-high heat. Stand the lamb chops on their fat side and press gently with tongs to render the fat for about 5 minutes.
  • Lay the chops flat in the skillet and sear them for 3 minutes per side.
  • Lower the heat to medium-low. Remove most of the fat from the pan, leaving just a bit for flavor. Add in butter, garlic, and thyme. Stir until the butter foams.
  • Baste the lamb chops with the garlic butter for about 1 minute.
  • Transfer the lamb chops to a plate, pour the remaining garlic butter sauce over them, and serve hot.

Notes

For more flavor, consider marinating the lamb in olive oil, garlic, and herbs for a few hours. Experiment with herbs like rosemary or oregano for variety. Store leftovers in an airtight container in the refrigerator for up to 3 days.
