Instructions

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a loaf pan or line with parchment paper.
  • In a large bowl, combine ground chicken, eggs, grated Parmesan, and 1/2 cup shredded mozzarella. Add almond flour, milk, minced garlic, chopped parsley, onion powder, Italian seasoning, salt, and pepper. Mix well, avoiding over-mixing.
  • Transfer mixture to prepared loaf pan, smoothing the top for even cooking.

Cooking

  • Bake uncovered for 30-35 minutes, until the meatloaf reaches an internal temperature of 165°F (74°C).
  • Remove from oven and sprinkle remaining shredded mozzarella on top.
  • Broil for an additional 3-5 minutes until the cheese melts, bubbles, and is lightly golden.
  • Let rest for 10 minutes before slicing to allow juices to redistribute. Garnish with fresh parsley.

Notes

Chill the mixture before baking for enhanced flavor. Add chopped bell peppers or spinach for extra nutrition. Use a meat thermometer for perfect doneness.
