Meatloaf Mixture

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, seasoned breadcrumbs, eggs, Parmesan cheese, minced garlic, chopped onion, milk, parsley, Italian seasoning, salt, and black pepper. Mix until well incorporated but do not overmix.
  • Shape the mixture into a loaf and place on a baking sheet lined with parchment paper.
  • Brush the top of the meatloaf with olive oil.

Cooking

  • Bake in the preheated oven for 45 to 50 minutes, or until the center is no longer pink and the loaf is golden.
  • If using mozzarella topping, sprinkle it on during the last 10 minutes of baking.
  • Let the meatloaf rest for a few minutes before slicing and serving.

Notes

Consider adding roasted bell peppers or grated zucchini for extra flavor. The meatloaf can be prepared a day in advance and stored in the refrigerator. It freezes well; cut into portions, wrap, and place in a freezer bag.
