Sauce Ingredients

  • 1/2 tsp cornstarch mixed with 1 tbsp water To thicken the sauce.

Instructions

Preparation

  • Wash the bok choy thoroughly under cool water and pat it dry with a kitchen towel.
  • Separate the leafy greens from the thicker white stems and chop into bite-sized pieces.

Cooking

  • Heat the vegetable or sesame oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic, grated ginger, and half of the chopped scallions. Sauté for one minute.
  • Add the thicker white stems of the bok choy to the skillet and stir-fry for 2–3 minutes.
  • Then add the leafy greens and stir-fry for another 2 minutes until wilted.

Finishing

  • In a small bowl, whisk together the soy sauce, vinegar, chili flakes, honey, and cornstarch slurry.
  • Pour the sauce over the bok choy, stirring well to coat.
  • Simmer for 1–2 minutes to thicken the sauce.
  • Garnish with toasted sesame seeds and remaining scallions before serving.

Notes

Use fresh ingredients for the best flavor. High heat and constant stirring are key to a successful stir-fry. Adjust chili for desired heat.
