Instructions

Preparation

  • Wrap golden and red beets individually in aluminum foil and roast them in a preheated oven at 400°F (200°C) for about 45-50 minutes.
  • Allow beets to cool, then carefully peel the skins and slice into 1/2-inch thick rounds.

Building Stacks

  • Begin with a slice of golden beet, then add a spoonful of creamy burrata on top.
  • Layer on a red beet slice to create contrast and repeat the process, finishing with a flourish of burrata.

Finishing Touches

  • Scatter chopped pistachios over the stacks for added crunch.
