Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a 9×9-inch baking dish, melt the butter.
  • In a separate bowl, combine 200 g sugar, 30 g cocoa powder, 225 g flour, 10 g baking powder, 200 g milk, 10 g vanilla extract, and 150 g sourdough starter. Stir until smooth.
  • Gently fold in the 100 g chocolate chips.
  • Spread the batter evenly over the melted butter without stirring.
  • In another bowl, whisk together 330 g sugar and 40 g cocoa powder. Sprinkle this over the batter.
  • Carefully pour 480 g boiling water over the top of the mixture without stirring.
  • Bake for 35-40 minutes until the top looks set while the center remains gooey.
  • Allow the dish to cool slightly before serving.

Notes

Always use a quality sourdough starter for the best flavor. Adjust sugar for less sweetness. Let cobbler cool slightly for enhanced texture. Can be prepared a day in advance.
