Ingredients

For the Toasts

  • 4 slices rustic bread (sourdough, ciabatta, or French bread) Each slice will have a delightful crunchy crust and soft interior.
  • 2 tbsp butter (softened) Adds a creamy texture and rich flavor.
  • 2 cloves garlic (minced) Infuses the dish with savory aroma.
  • 1 cup mushrooms (button, cremini, or wild, sliced) Adds earthy flavor and hearty bite.
  • 1 tbsp olive oil For sautéing, brings subtle richness.
  • 1 tbsp butter Enhances buttery goodness while cooking mushrooms.
  • 1/2 tsp dried thyme (or fresh) Introduces herbal note that complements mushrooms.
  • Salt & pepper to taste Essential for seasoning and enhancing flavors.
  • 1/2 tsp balsamic vinegar (optional) Adds tangy sweetness and complexity.
  • 1/2 cup shredded mozzarella Provides gooey, melty texture.
  • 1/2 cup shredded Gruyère or Parmesan Adds nutty flavor that pairs well with mozzarella.
  • Fresh parsley for garnish Brightens up presentation and adds freshness.

Instructions

Preparation

  • Preheat oven to 375°F (190°C). Mix softened butter with minced garlic and liberally spread it over each slice of bread. Lay the slices on a baking sheet and lightly toast them in the oven for 5 minutes until they’re crisp and golden.

Cooking the Mushrooms

  • Heat butter and olive oil in a pan over medium heat. Once melted, add the sliced mushrooms along with thyme, salt, and pepper. Cook for about 5 minutes or until the mushrooms are tender and aromatic. If using balsamic vinegar, stir it in just before removing from heat.

Assembling the Toasts

  • Generously layer each toasted slice with the sautéed mushrooms. Follow this with a sprinkle of mozzarella and Gruyère, ensuring the toasts are well-covered.

Final Baking

  • Place the topped toasts back in the oven and bake for an additional 5-7 minutes until the cheese melts beautifully and turns golden brown. Remove from the oven, garnish with freshly chopped parsley, and serve warm.

Notes

For variations, consider different mushroom types, cheese combinations, or add panko breadcrumbs for crunch. Fresh herbs can enhance flavor, and a hint of red pepper flakes adds heat.
