Instructions

Preparation

  • In a bowl, combine the olive oil, smoky paprika, garlic powder, salt, black pepper, and optional cayenne pepper. Mix well.
  • Coat each cod fillet evenly with the seasoning mixture, making sure to cover all sides. Let the seasoned cod rest for about 15 minutes.

Roasting the Tomatoes

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, toss the halved cherry tomatoes with olive oil, garlic powder, salt, black pepper, and dried oregano.
  • Spread them out evenly on a baking sheet. Roast in the preheated oven for 20–25 minutes until slightly charred and softened.

Grilling the Cod

  • Heat a grill pan or outdoor grill over medium heat.
  • Once hot, place the seasoned cod fillets on the grill. Cook for 2–3 minutes per side until it flakes easily with a fork.

Making the Creamy Dill Sauce

  • In a small mixing bowl, whisk together mayonnaise, sour cream, finely chopped dill, fresh lemon juice, minced garlic, salt, and black pepper until smooth.
  • Refrigerate the sauce until ready to serve.

Assembly & Serving

  • On serving plates, arrange your roasted cherry tomatoes and place the grilled cod fillets on top.
