Instructions

Preparation

  • Preheat your grill or grill pan over medium-high heat and lightly oil the grates.
  • Thread pineapple chunks onto skewers, ensuring bamboo skewers have been soaked in water for at least 30 minutes.
  • In a bowl, combine glaze ingredients: honey or maple syrup, lime juice and zest, chili flakes or paste, soy sauce, grated garlic, and a pinch of salt. Whisk until well combined.

Grilling

  • Place the skewers on the grill, cooking for 2–3 minutes per side, turning carefully to achieve grill marks.
  • In the last minute, baste the skewers generously with the glaze.

Coconut Yogurt Preparation

  • Mix the coconut yogurt with lime zest and a pinch of salt in a small bowl.

Assembly

  • Spread the coconut yogurt onto a platter, then place the grilled pineapple skewers on top.
  • Drizzle with remaining glaze and garnish with fresh herbs and toasted coconut flakes.
