Ingredients

Main ingredients

Chili oil ingredients

  • 1/4 cup olive oil Imparts warmth and richness.
  • 1/2 tsp red chili flakes Contributes a kick of heat.
  • 1 small clove garlic, minced Adds a warm, aromatic layer.
  • a pinch smoked paprika Enhances the dish’s depth.
  • 1/2 tsp lemon zest or juice (optional) For a bright, zesty finish.

Instructions

Grilling the Zucchini

  • Heat a grill pan or an outdoor grill over medium-high heat. Toss the zucchini slices with olive oil, salt, and pepper until well-coated.
  • Place the zucchini on the grill and let grill for about 2–3 minutes per side, or until beautifully charred and tender. Set aside to cool slightly.

Making the Chili Oil

  • In a small saucepan, heat the olive oil over low heat.
  • Add the minced garlic and red chili flakes, cooking gently until fragrant, about 1–2 minutes.
  • Stir in the smoked paprika and lemon zest if using. Remove from heat and let the oil infuse for a few minutes.

Assembling the Salad

  • In a large serving bowl, combine the chickpeas, grilled zucchini, and chopped basil. Toss gently to combine.
  • Season with a pinch of salt and pepper to elevate the flavors.

Adding the Burrata

  • Place the burrata ball in the center of the salad. Gently tear open the burrata with a knife to let the creamy interior ooze out over the salad.

Final Touches

  • Spoon the warm chili oil over the burrata and the assembled salad, finishing with additional fresh herbs and a sprinkle of salt.
  • Serve immediately and enjoy!

Notes

For a smoky flavor, use a grill seasoned with olive oil. A dash of balsamic vinegar can enhance sweetness.
