Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a cupcake tin with 12 liners.
  • In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  • In another bowl, cream the softened butter and brown sugar until fluffy. Add eggs, vanilla extract, and optional butter extract, mixing until combined.
  • Gradually alternate adding the dry flour mixture and cream soda until you achieve a smooth batter.
  • Fill the cupcake liners about 2/3 full with the batter and bake for 16-18 minutes. Let cool completely.
  • Once cool, scoop out the center and fill with butterscotch pudding or whipped filling.

Frosting

  • Beat the softened butter until creamy. Mix in butterscotch sauce, vanilla extract, and optional butter extract.
  • Gradually mix in powdered sugar and heavy cream until fluffy and ready for piping.

Assembly

  • Pipe frosting onto the cupcakes and drizzle with extra butterscotch or caramel sauce.

Notes

To ensure rising, check that your baking soda and baking powder are fresh. Consider adding a sprinkle of sea salt on top of the frosting for contrast.
