  • In a medium bowl, combine the sautéed mixture with softened cream cheese, shredded mozzarella, grated Parmesan, and dried thyme or Italian seasoning. Stir until thoroughly mixed.
  • Carefully cut a pocket into the side of each chicken breast, ensuring you don’t slice all the way through. This will create space to hold the delicious filling.

Stuffing and Cooking

  • Generously fill each chicken pocket with the mushroom mixture. Use toothpicks or kitchen twine to secure the openings.
