Ingredients

For the crust

Instructions

Preparation

  • Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs and 1/4 cup granulated sugar. Pour in melted butter and mix until all crumbs are moistened. Press firmly into the bottom of the prepared pan.
  • In a large bowl, beat softened cream cheese and 1 cup granulated sugar until smooth. Add sour cream, then gradually incorporate eggs one at a time, mixing well after each. Stir in vanilla extract, chopped strawberries, and mashed banana.

Baking and Cooling

  • Pour the cheesecake batter over the prepared crust and spread evenly. Bake for 50-60 minutes until the center is set but slightly wobbly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for an hour.
  • Remove from the oven and cool to room temperature. Transfer to the refrigerator to chill for at least 4 hours or preferably overnight.

Preparing the Topping

  • In a bowl, combine sliced strawberries, sliced banana, granulated sugar, and lemon juice. Mix gently to help release the juices.

Serving

  • Just before serving, spoon the fruit mixture over the chilled cheesecake.

Notes

For an even richer cheesecake, substitute one cream cheese package with mascarpone. For added crunch, sprinkle toasted nuts on the topping. Prepare the crust and filling the night before to save time.
