Ingredients

For the Pizza Base

For Topping

  • 1 cup shredded Mexican cheese blend Melty mix of cheddar and Monterey Jack.
  • 1/2 cup enchilada sauce or taco sauce Tangy addition that brings everything together.
  • 1/4 cup diced tomatoes Adds color and flavor.
  • 2 tbsp sliced jalapeños Adds a spicy kick.
  • 2 tbsp chopped green onions Provides a refreshing finish.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C). Brush both sides of the tortillas with vegetable oil and place them on a sheet pan.
  • Bake the tortillas for 5-7 minutes until they turn golden and crispy.

Cooking the Filling

  • In a skillet over medium heat, cook the ground beef until browned. Add the taco seasoning and water, simmering for 2 minutes.
  • Warm the refried beans in a saucepan or microwave.

Assembling the Pizza

  • Spread warm refried beans over two crispy tortillas.
  • Top with seasoned beef and place a second tortilla on top to form a sandwich.
  • Spread enchilada or taco sauce over the top tortilla and sprinkle cheese.

Baking

  • Bake for 7-10 minutes until the cheese is melted and bubbly.
  • Remove from oven and top with diced tomatoes, jalapeños, and green onions.

Serving

  • Cut into quarters and serve immediately.
