For the Rice

Instructions

Preparation

  • In a mixing bowl, combine the honey, lime zest and juice, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper. Whisk until smooth.
  • Add the chicken to the marinade, ensuring each piece is coated. Let it marinate for 15–20 minutes.

Cooking

  • Preheat a skillet over medium-high heat or prepare your grill. Add the marinated chicken and cook until fully cooked and golden-brown, about 6–7 minutes per side.
  • Remove from heat and let it rest before slicing.

Preparing the Rice

  • In a medium pot, combine the rice with water or chicken broth. Bring to a boil, then reduce the heat, cover, and simmer until tender, about 15 minutes.
  • Stir in the lime juice, chopped cilantro, and a pinch of salt.

Avocado Preparation

  • In a bowl, gently toss the diced avocados with lime juice and a pinch of salt.

Assembly

  • Layer seasoned rice, then diced avocado, and finish with sliced chicken. Add optional toppings.

Serving

  • Serve with lime wedges on the side.

Notes

For deeper flavor, marinate the chicken for up to 2 hours. Grilling adds a smoky flavor, and you can prep rice and chop avocados in advance.
