Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan with butter or non-stick spray.
  • In a medium bowl, mix chocolate graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press into the bottom of the springform pan.

Making the Filling

  • In a large bowl, beat softened cream cheese with 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
  • Stir in sour cream, heavy cream, melted chocolate chips, and vanilla extract until smooth.

Baking

  • Pour the cheesecake filling over the crust and spread evenly. Bake for 55-65 minutes or until the center is almost set.
  • Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Refrigerate for at least 4 hours, preferably overnight.

Preparing the Topping

  • Combine sliced strawberries, 1/4 cup sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened, about 5-7 minutes. Let cool slightly.
