Ingredients

  • 1 tablespoon fresh ginger, grated adds warmth and spice
  • 1 cup tomato puree the base of the sauce
  • ½ cup heavy cream for a luscious finish
  • Fresh cilantro, for garnish brightens and adds freshness

Instructions

Preparation

  • In a large bowl, combine yogurt, lemon juice, cumin, garam masala, coriander, turmeric, and a pinch of salt, creating a vibrant marinade. Add the chicken cubes and toss everything together until well-coated. Let it marinate for at least 15 minutes.

Cooking

  • In a large skillet, heat butter and vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions turn golden brown.
  • Incorporate the marinated chicken into the skillet, sautéing for about 5 minutes or until browned.
  • Pour in the tomato puree, mix well, and let it simmer for about 10 minutes until the chicken is fully cooked.
  • Reduce the heat and stir in heavy cream. Simmer for an additional 5 minutes.
  • Taste the sauce and adjust salt as needed.
  • Sprinkle freshly chopped cilantro over the top and serve warm with rice or naan.

Notes

For even more tender chicken, marinate longer, ideally several hours or overnight. Add chili powder for spiciness. Stir in ground nuts for richness. Use freshly grated spices for better flavor.
