  • 1 pound Italian sausage (halal beef or chicken sausage if preferred)
  • 1 medium onion, finely diced
  • 1 red bell pepper sliced into strips
  • 1 green bell pepper sliced into strips
  • 1 yellow bell pepper sliced into strips
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 cup shredded mozzarella cheese

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the Italian sausage, breaking it apart with a spoon, until browned and cooked through, about 8-10 minutes.
  • Add the diced onion, sliced bell peppers, and minced garlic to the skillet. Sauté for 5–7 minutes until the vegetables are softened.
  • Pour in the diced tomatoes with their juices, stirring to combine. Season with sea salt and black pepper to taste. Let simmer for 3–5 minutes.
  • Transfer the sausage and pepper mixture to a casserole dish. Sprinkle the shredded mozzarella cheese on top.
  • Bake in the preheated oven for 20–25 minutes until the cheese is melted, bubbly, and slightly golden.
  • Allow the casserole to rest for a few minutes before serving.

Notes

Feel free to use sweet or spicy Italian sausage. You can also add mushrooms, zucchini, or spinach for additional nutrition. This dish can be prepared ahead of time and stored in the fridge.
