Ingredients

For the salmon rolls

For the sauce

  • 1 tbsp butter For melting into a luscious sauce.

  • 2 tsp cornstarch mixed with 2 tsp water Used to thicken the sauce for a perfect consistency.

Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • Season each salmon fillet with salt and pepper to taste.
  • In a bowl, combine ricotta cheese, grated Parmesan, chopped basil, lemon zest, salt, and pepper. Stir until well blended.
  • Spread a generous layer of the cheese mixture over each salmon fillet. Lay trimmed asparagus spears across the fillet and roll the salmon tightly. Place the rolls seam-side down in a greased baking sheet.

Cooking

  • Bake the salmon rolls for about 15-20 minutes, or until cooked through and flakes easily with a fork.
  • While the salmon is baking, melt butter in a small pan over medium heat. Add chicken broth and lemon juice, stirring well.
  • Blend in the cornstarch mixture and cook for 3-5 minutes until the sauce thickens slightly.

Serving

  • Once the salmon rolls are ready, spoon the sauce over them and enjoy your delicious meal!

Notes

Use fresh salmon, basil, and asparagus for the best taste. Consider adding garlic or a pinch of red pepper flakes to the cheese mixture for a flavor upgrade.
