  • 4 fillets salmon fillets (skinless, sliced thin for rolling) Fresh salmon fillets create a delicate texture.

  • 1/2 cup ricotta or cream cheese Provides a creamy, tangy filling.
  • 2 tbsp chopped fresh basil (plus extra for garnish) Infuses the rolls with a fresh herb note.
  • 1 clove garlic, minced Adds depth to the filling.

  • 1 tbsp olive oil or melted butter Adds richness and crispiness.
  • 1 bunch fresh asparagus Crisp nutritious side contrasting salmon.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C) and prepare the asparagus.
  • Trim woody ends from the asparagus and arrange them on a lined baking sheet. Drizzle with olive oil and season with salt and pepper.
  • In a small bowl, mix the ricotta or cream cheese with lemon zest, minced garlic, chopped basil, salt, and pepper until creamy.
  • Lay out each salmon fillet on a clean surface. Spread 1-2 tablespoons of the cheesy filling across the center of each piece and gently roll it up.

Baking

  • Place the salmon rolls seam-side down on the prepared asparagus. Drizzle with fresh lemon juice and olive oil.
  • Bake in the preheated oven for 18-20 minutes, or until cooked through and lightly golden.
  • Garnish with fresh basil and lemon wedges before serving.

Notes

For the best flavor, use fresh herbs. Feel free to add red pepper flakes for heat. Leftovers can be stored in the refrigerator for up to two days.
