Instructions

Roasting the Potatoes

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, toss the halved baby potatoes with olive oil, salt, and black pepper until well-coated.
  • Spread the potatoes evenly on a baking sheet and roast for about 20 minutes, or until golden and crispy.

Adding the Broccoli

  • After 20 minutes, add the broccoli florets to the baking sheet.
  • Toss gently to coat them with the remaining oil and seasonings.
  • Return the sheet to the oven for another 10 minutes, or until the broccoli is tender and golden.

Searing the Salmon

  • Heat a skillet over medium heat and melt the butter until it begins to foam.
  • Stir in the minced garlic, lemon zest, and juice, letting it sizzle for a few seconds.
  • Gently place the salmon fillets skin-side down in the skillet, searing for 3-4 minutes on each side.
  • Spoon the lemon-butter sauce over the salmon as it cooks.

Plating

  • Once everything is cooked, plate the roasted potatoes and broccoli alongside or beneath the salmon fillets.
  • Drizzle with the remaining lemon-butter sauce and garnish with fresh parsley.
  • Serve immediately and enjoy!

Notes

For enhanced flavor, consider marinating the salmon in lemon juice, minced garlic, and olive oil for 30 minutes before cooking. Alternately, you can add paprika or cayenne for a spicy kick.
