  • 1 cup grated Parmesan cheese For coating
  • 1 cup plain or Italian-style bread crumbs For coating
  • 1 cup shredded mozzarella cheese For topping
  • 2 tablespoons olive oil For searing

  • 1/4 cup ranch dressing or creamy garlic dressing Optional for marinating and coating

Instructions

Preparation

  • Pound the chicken breasts to about 3/4-inch thickness.
  • Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and paprika if using.
  • Dredge each chicken breast in flour, shake off excess, then dip in ranch dressing (if using). Coat with breadcrumb and Parmesan mixture.
  • In a large oven-safe skillet, heat olive oil over medium heat. Sear the chicken for 3 to 4 minutes on each side until golden brown.
  • Preheat your oven to 400°F (200°C). Spread ranch or garlic dressing over each piece of chicken, then top with mozzarella and extra Parmesan.
  • Bake in the preheated oven for 10 to 15 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Allow the chicken to rest for a few minutes before serving and garnish with fresh parsley.

Notes

For enhanced flavor, consider marinating the chicken in ranch dressing for a few hours. Double-coat with breadcrumbs for extra crunch, or mix in different types of cheese for variation. Serve with garlic mashed potatoes, roasted vegetables, or a fresh salad.
