Instructions

Preparation of the crust

  • Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, mix together the almond flour, coconut flour, salt, lemon zest, and 2 tablespoons of poppy seeds.
  • Pour in the melted butter and honey, stirring until it resembles coarse crumbs.
  • Press this mixture firmly into the bottom of the prepared pan.
  • Bake for 12–15 minutes or until the edges are golden. Let the crust cool completely in the pan.

Preparation of the filling

  • In a mixing bowl, whisk together the Greek yogurt, lemon juice, vanilla extract, and beaten eggs until combined.
  • Stir in the remaining 2 tablespoons of poppy seeds until evenly distributed throughout the mixture.

Baking the bars

  • Pour the creamy filling over the cooled crust and spread evenly.
  • Bake for an additional 25–30 minutes, or until the center is set but slightly wobbly.
  • Remove from the oven and allow to cool in the pan for about 10 minutes.

Chilling and serving

  • Place the pan in the refrigerator and let the bars chill for at least 3 hours to firm up.
