Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Combine chocolate cookie crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan.
  • For the caramel, cook 1 cup of granulated sugar until melted and amber in color, then add cubed butter and mix until melted.
  • Stir in heavy cream until smooth and let cool slightly.

Cheesecake Mixture

  • In a bowl, beat softened cream cheese and 1 1/4 cups of granulated sugar until creamy.
  • Add cocoa powder and mix until well combined.
  • Add eggs one at a time, incorporating well after each addition.
  • Stir in sour cream and vanilla extract until fluffy.
  • Divide the mixture into three portions; mix in different chocolates (semi-sweet, milk, and white) into each.

Layering & Baking

  • Layer the cheesecake batters into the crust, creating smooth, even layers for each portion.
  • Swirl the caramel into the top layer gently.
  • Bake in the preheated oven for 1 hour and 15 minutes or until the center is set but slightly jiggles.
  • Cool in the oven with the door ajar for 1 hour, then let it cool to room temperature.
  • Chill in the refrigerator for at least 4 hours, or overnight for best results.

Finishing Touches

  • For the ganache, heat heavy cream until boiling and pour over chopped dark chocolate. Stir until smooth.
  • Pour ganache over the chilled cheesecake, allowing it to cascade down the sides.
