  • 3 cups fresh or frozen cranberries
  • 3/4 cup pure maple syrup
  • 1/2 cup water
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 pinch salt
  • 2 tbsp unsalted butter (optional) Adds richness to the spread

Instructions

Preparation

  • In a medium saucepan, combine 3 cups of fresh or frozen cranberries, 1/2 cup of water, and 3/4 cup of pure maple syrup.
  • Place the saucepan over medium-high heat and allow the mixture to come to a boil.
  • Once boiling, reduce the heat to a simmer and cook for about 10 to 12 minutes until the cranberries burst and the mixture thickens.
  • Stir in 1 tsp of vanilla extract, 1/4 tsp of ground cinnamon, and a pinch of salt and let it simmer for an additional 2 to 3 minutes.
  • Transfer the mixture to a blender or use an immersion blender to puree until silky smooth, optionally stirring in 2 tbsp of unsalted butter while warm.
  • Let the butter cool slightly before transferring it to sterilized jars.

Notes

If you prefer a sweeter butter, adjust the amount of maple syrup. For extra flavor, consider adding a splash of orange or lemon juice, or experimenting with spices like nutmeg or ginger.
