Preparation

  • In a large mixing bowl, combine cold mashed potatoes, shredded cheese, egg, flour, chopped chives, garlic powder, salt, and pepper. Mix until smoothly integrated.
  • Preheat your oven to 400°F (200°C) and grease a mini muffin pan.

Baking

  • Spoon the potato mixture into each muffin cup, filling them to the top and smoothing the surface.
