Instructions

Preparation of Meatballs

  • In a mixing bowl, combine the ground turkey, breadcrumbs, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix well until combined. Form the mixture into small meatballs, approximately 1 inch in size.
  • Heat a tablespoon of olive oil in a pan over medium heat. Add the meatballs and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through.

Roasting the Vegetables

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the cubed sweet potatoes, sliced zucchini, diced bell pepper, and chopped onion with olive oil, garlic powder, smoked paprika, salt, and black pepper. Once evenly coated, spread the vegetables on a baking sheet.
  • Roast them for 20-25 minutes, flipping halfway through to ensure even cooking.

Cooking the Rice

  • Rinse the rice under cold water to remove any excess starch.
  • In a pot, bring 2 cups of water and the half teaspoon of salt to a boil.
  • Once boiling, add the rice, reduce the heat, cover, and let it simmer for about 15 minutes or according to the package instructions until the rice is tender.
