  • 1 tablespoon olive oil for sautéing
  • 1 small red onion, chopped
  • 3 cloves garlic, minced
  • 1 each red bell pepper, chopped
  • 1 each yellow bell pepper, chopped
  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional for heat
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled optional
  • 1 tablespoon lemon juice

  • Heat olive oil in a large skillet over medium-high heat until sizzles.
  • Add ground beef to the skillet, breaking it into small pieces and browning thoroughly.
  • Stir in the chopped red onion and minced garlic, cooking until fragrant.
  • Add chopped red and yellow bell peppers and diced zucchini, sautéing for 3-4 minutes.
  • Incorporate cherry tomatoes, salt, black pepper, smoked paprika, ground cumin, dried oregano, and crushed red pepper flakes, cooking for another 2-3 minutes.
  • Remove from heat and stir in fresh parsley and lemon juice. Top with crumbled feta cheese if desired.
  • Serve immediately, either on its own or over rice, quinoa, or pita.

Notes

Don't overcrowd the skillet for browning. Ensure veggies maintain some crunch.
