Instructions

Make the Dough

  • In a large mixing bowl, combine the self-rising flour and Greek yogurt. Mix until they start to come together.
  • Knead the mixture for about 5 minutes until smooth and elastic. Cover with a kitchen towel and let it rest for 20-30 minutes.

Prepare the Filling

  • In a separate bowl, combine the chopped spinach, crumbled feta cheese, cream cheese, minced garlic, chopped mint, and ground black pepper.
  • Mix thoroughly until well combined.

Shape Flatbreads

  • Divide the rested dough into four equal balls.
  • Flatten each ball on a lightly floured surface until about 1/4 inch thick.
  • Spoon a generous amount of filling onto one half of each round and fold over to create a half-moon shape, sealing the edges tightly.

Cook

  • Heat a dry non-stick pan over medium heat and cook each filled flatbread for about 3-5 minutes on each side until golden brown.

Serve

  • In a small bowl, stir together olive oil and mint sauce and serve on the side with the flatbreads.

Notes

For perfect flatbreads, ensure dough isn't overly sticky. Seal edges tightly to keep filling intact. Consider adding sun-dried tomatoes or olives for unique variations.
