  • 2 cans canned salmon, drained Each can is 6 oz.
  • 1 cup chopped fresh spinach Sautéed for reduced moisture.
  • 2 large eggs, lightly beaten Binds the ingredients together.
  • 1/3 cup crumbled feta cheese Adds creaminess and flavor.
  • 1/4 cup finely chopped red onion Provides crunch and flavor.
  • 2 tablespoons chopped fresh parsley Enhances freshness.
  • 1 teaspoon lemon zest Adds brightness.
  • 1/2 cup breadcrumbs Use panko or regular for crunch.
  • 2 tablespoons lemon juice Enhances flavors.
  • 2 cloves garlic, minced Adds depth of flavor.
  • 1 tablespoon chopped fresh dill (optional) Complementary flavor.
  • 1 teaspoon dried oregano Classic Mediterranean herb.

Instructions

Preparation

  • Drain the canned salmon and flake it with a fork in a large bowl. Optionally, remove any bones or skin.
  • In a small skillet, sauté the chopped spinach over medium heat for about 2 minutes until wilted, then let cool briefly.
  • In the bowl with flaked salmon, combine the sautéed spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill (if using), lemon juice, lemon zest, oregano, salt, and pepper. Mix until well combined.
  • Shape the mixture into 6 to 8 patties, each about 3 inches wide.
  • Heat olive oil in a large skillet over medium heat. Cook the patties for about 3 to 4 minutes on each side, until golden brown.
  • Serve warm, garnished with lemon wedges and tzatziki sauce.

Notes

Add smoked paprika or cayenne for a spicy kick. Store leftovers in the fridge for up to three days.
