Ingredients

For the filling

  • 2 cups fresh spinach leaves Nutrient-packed and vibrant.

For the sandwich

  • 1/2 tablespoon extra virgin olive oil Enhances flavor.
  • 4 slices bread Choose your favorite type.
  • 2 tablespoons butter, softened For a golden crust.
  • a pinch sea salt To elevate the dish.
  • a pinch dried oregano Classic Mediterranean herb.
  • a pinch crushed red chili flakes For a hint of spice.
  • optional honey Balances flavors with sweetness.

Instructions

Preparation

  • Heat the olive oil in a non-stick pan over medium heat. Add the spinach and sauté for about 5–6 minutes, stirring occasionally, until wilted. Sprinkle with a little sea salt, mix well, and transfer to a plate.
  • Wipe the pan clean with a paper towel.
  • Spread the softened butter on one side of each bread slice. Place two slices, butter-side down, into the pan.

Assembly

  • Evenly distribute the chopped sun-dried tomatoes over the bread, pressing them gently so they stick.
  • Layer half of the crumbled feta and half of the shredded cheddar over the tomatoes. Add the sautéed spinach on top. Sprinkle with the remaining feta and cheddar, oregano, and chili flakes.
  • Place the remaining two bread slices on top, butter-side up.

Cooking

  • Cook over medium heat for about 5 minutes, or until the bottom is golden and crispy.
  • Carefully flip each sandwich and cook the other side for another 5 minutes, until the bread is beautifully toasted and the cheese is perfectly melted.
  • Sprinkle with extra oregano and chili flakes for garnish. Optional: Drizzle with a little honey.

Notes

For variations, consider adding more veggies like bell peppers or mushrooms, or swapping proteins such as grilled chicken.
