Dip Base

  • 1 tsp finely chopped fresh thyme or rosemary Imparts an earthy, fragrant essence.
  • 1/4 tsp chili flakes (optional) For those who like a hint of heat.
  • pinch flaky salt To enhance all the beautiful flavors.
  • 1 thick breadstick, wooden skewer, or edible rosemary sprig (for the wick) Gives the dip its candle-like appearance.

Serving

Instructions

Preparation

  • In a food processor or mixing bowl, combine the ricotta cheese, cream, olive oil, salt, pepper, and lemon zest. Whip until ultra-smooth and airy.
  • Spread the ricotta mixture into a shallow dish, leaving space in the center for the butter candle.
  • In a separate bowl, mix the softened butter with minced garlic, fresh herbs, chili flakes, and a pinch of flaky salt until fully incorporated.
  • Form the butter mixture into a short, thick cylinder resembling a stubby candle and chill in the refrigerator for about 15 minutes until firm.

Assembly

  • Once the butter candle is firm, insert the wick (breadstick, skewer, or rosemary sprig) into the center.
  • Return the butter candle to the fridge until solid again.
  • To serve, place the butter candle upright in the center of the ricotta dip and light the wick if using a skewer.
  • Allow the butter to melt into the ricotta and then swirl the mixture together before serving with warm, crusty bread or focaccia.

Notes

For a healthier twist, substitute some butter with creamy Greek yogurt or an avocado spread. Ensure to allow ricotta to come to room temperature for the best texture.
