Lemon Dipping Custard

  • 2 egg yolks for lemon dipping custard Ensures the custard achieves a luscious thickness.
  • 1 tbsp cornstarch Helps thicken the custard.

  • 3/4 cup whole milk Enriches the custard with smooth mouthfeel.

Instructions

Preparation

  • Roll out the thawed puff pastry on a clean, lightly floured surface.
  • In a mixing bowl, combine poppy seeds, lemon zest, granulated sugar, and vanilla extract.
  • Cut the dough into strips approximately 2 cm wide and roll each strip into a spiral.
  • Chill the shaped blossoms for about 10 minutes.

Cooking

  • Heat neutral oil to 175°C (350°F) in a heavy-bottomed pot.
  • Fry the blossoms in small batches for 1–2 minutes on each side until golden-brown.
  • Drain the fried blossoms on paper towels and toss them in vanilla sugar.

Making the Dipping Custard

  • In a saucepan, whisk together egg yolks, cornstarch, and sugar.
  • Gradually incorporate the whole milk, lemon zest, and lemon juice, stirring continuously.
  • Cook until thickened, then whisk in the butter until smooth.

Serving

  • Serve the Mini Lemon-Poppy Churro Blossoms warm alongside the lemon dipping custard.
