Ingredients

For the Filling

  • 16 oz finely chopped mushrooms
  • 1 cup finely chopped onion
  • 1 clove garlic, minced
  • 3 tablespoons olive oil for sautéing
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 to 1 1/2 cups shredded mozzarella cheese for topping

For the Pastry

  • 1 package puff pastry, thawed
  • 1 egg beaten (for egg wash)

Instructions

Preparation

  • Heat the olive oil in a skillet over medium-high heat. Add the finely chopped onion, sautéing until soft and fragrant.
  • Add the finely chopped mushrooms to the skillet. Cook until all the moisture from the mushrooms evaporates.
  • Stir in the mayonnaise, salt, black pepper, minced garlic, and grated Parmesan cheese. Let the mixture cool slightly.
  • Roll out two sheets of thawed puff pastry to approximately 12x16 inches.
  • Evenly spread the cooled mushroom mixture over each sheet of puff pastry, then sprinkle with shredded mozzarella cheese.
  • Starting from the long side, roll each pastry sheet tightly into a log.

Baking

  • Preheat your oven to 365°F (185°C).
  • Line a baking sheet with parchment paper. Brush the rolls with the beaten egg wash, slice into 1-inch pieces, and place flat on the baking sheet.
  • Bake for 30-40 minutes or until golden and puffy.
  • Serve warm and enjoy.
