Instructions

Preparation

  • In a large pot, heat the butter or oil over medium heat.
  • Add the diced onion, bell pepper, and celery. Cook for about 5–7 minutes until the vegetables are softened and fragrant.
  • Stir in minced garlic, paprika, and cayenne pepper. Cook for an additional minute to allow the spices to bloom and infuse the oil.
  • Pour in the seafood stock or vegetable broth and add the corn. Bring the mixture to a light boil, then reduce the heat to simmer for about 10 minutes.
  • If you’re using gelatin for a creamier texture, mix it with a bit of warm broth in a separate bowl before stirring it into the pot.
  • Stir in the heavy cream and bring the soup back to a gentle simmer.
  • Add the peeled and deveined shrimp to the pot. Cook for 4–5 minutes, or just until the shrimp turns pink and opaque.
  • Taste for seasoning and adjust with salt and pepper as needed. Ladle the bisque into bowls and garnish with chopped green onions before serving hot.

Notes

For an extra boost of flavor, try adding a splash of lemon juice before serving. If you prefer a thicker bisque, consider pureeing a portion of the soup and mixing it back in. Fresh herbs like parsley or thyme can elevate the flavors significantly.
