Instructions

Preparation

  • Wash the beef thoroughly, cut it into bite-sized chunks, and place it in a pot with water, salt, and black pepper. Bring to a boil, then reduce and let it simmer for 20-25 minutes until tender.
  • While the beef is cooking, blend the plum tomatoes, red bell pepper, habanero, and half an onion until smooth.
  • Chop the remaining half of the onion finely for sautéing.

Cooking

  • Heat the olive oil in a saucepan over medium heat, add the chopped onions, and sauté for about 3-5 minutes until softened.
  • Stir in the blended tomato and pepper mixture along with additional black pepper, and boil for about 5 minutes.
  • Add the tender beef and beef stock to the saucepan, and stir to combine. Add more broth if needed for desired consistency.
  • Season the stew with thyme, bouillon powder, curry powder, and adjust salt to taste.
  • Cover and let it simmer on medium-low for about 10 minutes.

Serving

  • Serve hot with rice, crispy plantains, or warm bread.

Notes

For enhanced flavor, marinate beef with spices and olive oil before cooking. Use a pressure cooker for faster cooking.
