Ingredients

For the Crust

  • 1 cup graham cracker crumbs or crushed digestive biscuits

For the Blueberry Compote

  • 1 cup fresh or frozen blueberries Bursts with flavor and vibrant color.
  • 2 tbsp honey or maple syrup Enhances the natural sweetness.
  • 1 tsp lemon zest Brightens the compote.
  • 1 tsp lemon juice Adds a fresh zing.

Instructions

Prepare the Crust

  • Mix the graham cracker crumbs, melted butter, and honey in a mixing bowl. Press the mixture firmly into mini muffin liners or silicone molds. Refrigerate for about 10 minutes to set.

Make the Blueberry Compote

  • In a small saucepan over medium heat, combine the blueberries, honey, lemon zest, and lemon juice. Cook for 5-7 minutes until the blueberries burst and the mixture thickens slightly. Remove from heat and let it cool.

Whip the Cheesecake Filling

  • In a bowl, beat together the softened cream cheese, goat cheese, powdered sugar, and vanilla extract. Fold in the whipped heavy cream gently.

Assemble the Cheesecake Bites

  • Spoon the cheesecake mixture over the chilled crusts. Swirl a small spoonful of blueberry compote into the cheesecake mixture to create a marbled effect.

Chill & Serve

  • Place the assembled cheesecake bites in the refrigerator for at least 2 hours. Garnish with additional blueberries and a drizzle of honey before serving.

Notes

Allow ample time for chilling; overnight setting will produce a firmer texture. Use softened cheese for a smooth filling.
