Ingredients

For the crust

  • 1 1/2 cups graham cracker crumbs Foundation of our crust

For the filling

For the ganache and toppings

  • 1 cup semi-sweet chocolate chips For the chocolate ganache topping
  • 1/4 cup heavy cream Helps achieve silky consistency

  • mini chocolate chips Sprinkling on top for extra chocolate

Instructions

Preparation

  • Line a 9x9-inch baking pan with parchment paper.
  • In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until crumbly, then press firmly into the bottom of the prepared pan. Chill in the refrigerator.
  • In a large bowl, beat together cream cheese and peanut butter until smooth. Gradually mix in powdered sugar and vanilla until creamy and lump-free.
  • Spread the peanut butter filling evenly over the chilled crust, smoothing the top with a spatula. Chill again to firm up.
  • In a microwave-safe bowl, combine chocolate chips and heavy cream. Heat in 30-second intervals, stirring, until smooth. Pour chocolate ganache over the filling and spread evenly.
  • Sprinkle with crushed peanuts and mini chocolate chips.
  • Chill the pan for at least 2 hours until fully set.
  • Lift the cheesecake bites out of the pan using the parchment paper. Cut into squares and serve.

Notes

Ensure cream cheese is softened before mixing. Toast crushed peanuts for extra crunch, or use dark chocolate for the ganache. These bites can also be made in fun shapes using silicone molds.
