Instructions

Preparation

  • In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan.

Topping Preparation

  • In a saucepan, combine mixed berries, granulated sugar, cornstarch, and water. Cook over medium heat, stirring constantly until the mixture thickens, about 5-7 minutes. Remove from heat and let cool slightly.
  • Once the fruit mixture has cooled, spoon it over the cheesecake filling.

Chilling

  • Place the cheesecake in the refrigerator for at least 4 hours to set properly.
