Instructions

Preparation

  • Mix the crushed vanilla wafers with the melted butter in a medium bowl until well coated.
  • Press the mixture firmly into the bottom of a 9x13-inch dish to form a solid crust.
  • Chill the crust in the refrigerator for at least 20 minutes.

Making the Filling

  • In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
  • Gently fold in half of the whipped cream to the cream cheese mixture.
  • Divide this mixture into two bowls. In one bowl, add the strawberry puree and optional gelatin powder, mixing until fully combined.

Assembling the Cake

  • Spread the plain cream cheese layer over the chilled crust.
  • Sprinkle the diced fresh strawberries evenly on top.
  • Spread the strawberry-flavored cream cheese mixture over the fresh strawberries.

Chilling and Garnishing

  • Cover the dish with plastic wrap and chill the cake in the refrigerator for at least 4 hours or until fully set.
  • Just before serving, top the cake with fresh strawberry slices, whipped cream swirls, and a sprinkle of crushed vanilla wafers.

Notes
