Instructions

Preparation

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream the softened butter and granulated sugar together until fluffy.
  • Beat in the ricotta cheese, egg, vanilla extract, orange zest, and orange juice into the butter-sugar mixture.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the dried cranberries and optional chopped apricots gently.
  • Cover the mixing bowl and refrigerate the dough for about 30 minutes.
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Baking

  • Drop heaping tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
