Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease your baking dish with oil or cooking spray.
  • In a medium bowl, combine ricotta or cottage cheese, shredded mozzarella, grated Parmesan, minced garlic, egg, thyme (or Italian seasoning), salt, and black pepper. Mix well.
  • Place a layer of thinly sliced zucchini at the bottom of the greased baking dish.
  • Spoon some of the cheese mixture over the zucchini layer and spread it evenly.
  • Continue layering zucchini and cheese mixture until all ingredients are used, finishing with a final layer of cheese on top.
  • Sprinkle seasoned breadcrumbs over the top layer of cheese if desired.

Baking

  • Bake uncovered for 30–35 minutes until bubbling and golden.
  • Switch to broil for 1–2 minutes for a crispy top.

Serving

  • Let cool for 5–10 minutes before slicing.
  • Garnish with fresh herbs if desired.
