  • 1/3 cup apple cider vinegar Provides tanginess and acts as a preservative.

  • 1 tbsp honey or maple syrup Adds a touch of sweetness.
  • 1/2 tsp salt Enhances all the flavors.
  • 1/2 tsp ground turmeric Adds earthiness and color.

Instructions

Preparation

  • In a pan over medium heat, lightly sauté the pineapple, onion, garlic, and habaneros for 4–5 minutes until softened and slightly charred.
  • Transfer everything to a blender. Add in the vinegar, lime juice, honey, turmeric, salt, and smoked paprika if using. Blend until very smooth.
  • Pour the blended mixture into a saucepan and simmer over low heat for 10–15 minutes, stirring occasionally.
  • Once cooled, pour the sauce into sterilized bottles or jars. It keeps well in the refrigerator for up to 1 month.
