Instructions

Preparation

  • In a high-speed blender or food processor, combine the frozen pineapple chunks, coconut milk, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Blend until smooth and thick, resembling soft serve ice cream.
  • If the mixture is too thick, add a splash more milk to loosen it while maintaining its scoopable texture.
  • Transfer the blended mixture into an airtight container and freeze for about 30 minutes for a firmer texture (optional).
  • Layer fresh pineapple chunks into a clear cup or bowl as a base.
  • Use a spoon or piping bag to layer the ice cream over the fresh chunks in tall swirls.
  • Top with extra pineapple, a sprinkle of coconut flakes, or a drizzle of honey for garnish.

Notes

For a fluffier texture, blend longer to incorporate more air. Substitute honey with agave syrup for a clearer taste, or omit for a sugar-free option. Use clear cups for presentation.
