Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and lime zest. Press firmly into the bottom of the prepared springform pan.
  • Bake for 10 minutes, then allow to cool completely.

Filling

  • In a large mixing bowl, beat the softened cream cheese until creamy and smooth.
  • Gradually add sugar, mixing well after each addition.
  • Incorporate sour cream, eggs, lime juice, and vanilla extract until smooth and homogenous.
  • Gently fold in drained crushed pineapple.

Baking

  • Pour the filling over the cooled crust, spreading evenly with a spatula.
  • Bake for 60-70 minutes, or until the center is just set and edges are lightly browned.
  • Turn off the oven and let the cheesecake cool inside with the oven door slightly ajar for approximately 1 hour.

Chilling

  • Once cooled, refrigerate it for at least 4 hours or overnight for optimal texture and flavor.
