Instructions

Preparation

  • In a bowl, mix chocolate cookie crumbs with melted butter until well combined. Press mixture into the bottom of a springform pan to form the crust.
  • In a separate bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
  • In another bowl, whip heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate it.
  • Add drops of pink food coloring to the mixture until you reach your desired shade.
  • Pour the cheesecake mixture over the prepared crust, smoothing the top with a spatula.
  • Refrigerate for at least 4 hours, preferably overnight.
  • Once chilled, top with colorful M&M candies before serving.
